Hakkaisan is taking on the challenge of maturing sake by using the power of nature. In the past, the low temperature "Yukimuro", or snow cellar, was used for food storage in the Uonuma region. Inside the Yukimuro, snow keeps the temperature at a stable 3 degree Celsius year round. The sake becomes very smooth after maturing for 3 years in the Yukimuro.
