This sake, crafted by Master Brewer Naohiko Noguchi—known as “the god of sake brewing”—features a rich and concentrated umami flavor developed through over three years of low-temperature aging. It features botanical notes and a clean, crisp finish.Botanical and spice nuances with aromas of nectarine, dried flowers and a hint of honey. The mouthfeel is minerally and light, although there is a sense of concentration in the flavor. The astringency, bitterness, and fresh acidity keep the entire palate well-balanced and tight, with a lingering tartness and a hint of tartness.
