This product is produced in limited quantities by Hakutsuru Sake Brewery, which was founded in 1743, to commemorate its 280th anniversary. We use 100% rice grown in Hyogo Prefecture, which is considered the highest quality of Yamada Nishiki, the king of sake rice. This daiginjo sake is made by polishing the rice to 38% and fermenting it slowly over a month at low temperatures.
